  8. 8. Slice the ginger into thin rounds.
  9. 9. Rinse the jars with hot water.
  10. 10. Distribute the lime strips, lemongrass, and ginger evenly into the hot jars.
  11. 11. Squeeze all the limes.
  12. 12. Top up the lime juice with water until you have exactly 500 milliliters of liquid.
  13. 13. Add the lime juice and pectin sugar to a pot.
  14. 14. Stir the mixture while heating it up.
  15. 15. Bring the mixture to a boil.
  16. 16. Boil the jelly vigorously while stirring for as long as specified on the pectin sugar package.
  17. 17. Pour the hot jelly into the prepared jars.
  18. 18. Seal the jars tightly.
  19. 19. Turn the jars upside down.
