🍰 Lime Ice with Citrus Salad

Ingredients
- 50 g Sugar
- 50 ml Water
- 4 red sweet cherries
- 2 egg yolks (M)
- zested peel of 1 lime
- juice of 2 limes
- 400 ml whipping cream
- 3 pink grapefruits
- 3 juice oranges
- 2 tbsp orange liqueur
- 2 tbsp chopped pistachios
Instructions
- 1. Put sugar and water in a pot and boil the mixture for 1 minute.
- 2. Finely chop the cocktail cherries.
- 3. Whisk the egg yolks, the grated lime zest, and the lime juice in a bowl.
- 4. Stir the warm sugar solution into the egg yolk mixture gradually.
- 5. Whip the cream until stiff and gently fold it into the lime cream.
- 6. Pour the mixture into an ice cream maker and freeze it.
- 7. Peel the grapefruit and oranges thickly so that no white pith remains.
- 8. Segment the citrus fruits to separate the flesh pieces.
- 9. Mix the citrus segments with the orange liqueur and the pistachios.
- 10. Let the salad marinate for 20 minutes.
- 11. Portion the lime ice and serve it with the citrus salad.
