🍽️ Crunchy Lime Pie with Meringue

Ingredients
- 150 g flour
- 1 tbsp powdered sugar
- 1 tbsp ice-cold water
- 125 g cold butter
- butter (for the pan)
- 6 egg yolks
- 400 g sweetened condensed milk
- 4 limes
- 6 egg whites
- 175 g sugar
- 0.25 tsp baking powder
- dried legumes
- 0.125 l whipping cream
- lime slice (for garnish)
Instructions
- 1. Mix flour, powdered sugar, water, and butter in a bowl until a smooth dough forms.
- 2. Place the dough in a cool spot for 1 to 2 hours to rest.
- 3. Preheat the oven to 200 degrees.
- 4. Grease a pie pan with a 25-centimeter diameter well with fat.
- 5. Roll the dough between two sheets of plastic wrap into a circle 27 to 28 centimeters in diameter.
- 6. Remove the wrap and carefully line the pan with the dough.
- 7. Prick the base several times with a fork to prevent it from rising.
- 8. Place legumes (e.g., dried beans) as pie weights on the dough base.
- 9. Bake the dough for 15 minutes in the oven.
- 10. Remove the pan from the oven and remove the legumes.
- 11. Bake the empty base for another 10 minutes until golden brown.
- 12. Let the pie base cool completely.
- 13. Put the egg yolks in a separate bowl.
- 14. Whip the egg yolks thickly with the condensed milk.
- 15. Wash the limes hot and dry them well.
- 16. Grate the zest of two limes finely and add it to the egg yolk mixture.
- 17. Squeeze the limes and measure out about 1/8 liter of juice.
- 18. Add the lime juice to the cream as well and stir everything briefly.
- 19. Pour the cream onto the cooled pie base and smooth it out.
- 20. Bake the pie for 20 to 25 minutes in the oven.
- 21. In the meantime, beat the egg whites to stiff peaks.
- 22. Trickle sugar and baking powder gradually into the egg whites.
- 23. Put the meringue mixture on the pre-baked pie.
- 24. Spread the mixture cloud-shaped over the pie with a tablespoon.
- 25. Turn on the oven grill.
- 26. Brown the meringue golden brown in just under 5 minutes.
- 27. Watch the pie constantly so that the meringue does not burn.
- 28. Let the pie cool well in the pan.
- 29. Whip the cream stiffly.
- 30. Decorate the pie with the whipped cream.
- 31. Optionally garnish the pie with fresh lime slices.
