🍽️ Homemade Letscho Vegetable Relish

Ingredients
- 1 kg red, green bell peppers
- 700 g flesh tomatoes
- 150 g onions
- 50 g bacon (streaky)
- 2 tbsp lard
- 1 tsp paprika powder
- 400 ml vegetable broth
- salt
- black pepper
Instructions
- 1. Cut the peppers in half lengthwise.
- 2. Remove the seeds and the white inner membranes.
- 3. Wash the peppers and cut them into small pieces.
- 4. Pour boiling water over the tomatoes to loosen the skin.
- 5. Remove the skin and the stem bases of the tomatoes.
- 6. Cut the tomatoes into eighths.
- 7. Peel the onions and cut them in half.
- 8. Cut the onion halves into thin half-rings.
- 9. Cut the bacon into small cubes.
- 10. Heat the lard in a wide pot.
- 11. Fry the bacon cubes over medium heat.
- 12. Sauté the onions in the bacon fat.
- 13. Sprinkle the paprika powder over the mixture.
- 14. Add the pepper strips and the tomatoes to the pot.
- 15. Season the vegetables with salt and pepper.
- 16. Sauté the vegetables over high heat for about 3 minutes.
- 17. Pour in the vegetable broth and bring the mixture to a boil.
- 18. Reduce the heat.
- 19. Simmer the vegetables covered over low heat for about 30 minutes.
- 20. Fill the hot letscho into rinsed-out hot jars.
- 21. Seal the jars immediately.
- 22. Let the jars cool down standing on their lids for about 15 minutes.
- 23. Turn the jars over and let them cool completely.
