🍽️ Lengfish Packets with Mushrooms and Carrots

Ingredients
- 300 g mushrooms
- 3 carrots
- 125 ml classic vegetable broth
- salt
- pepper
- 600 g cod fillets (4 cod fillets)
- 2 stalks lemongrass
Instructions
- 1. Wash the mushrooms thoroughly and slice them into thin pieces.
- 2. Peel the carrots and wash them.
- 3. First, slice the carrots into thin rounds.
- 4. Then, cut the carrot slices into fine strips.
- 5. Place the carrot strips into a pot.
- 6. Pour 5 tablespoons of vegetable broth over the carrots.
- 7. Add the mushroom slices to the pot.
- 8. Cover the pot with a lid.
- 9. Simmer the vegetables for about 5 minutes over medium heat.
- 10. Season the vegetables with salt and pepper.
- 11. Prepare 4 large sheets of aluminum foil.
- 12. Each foil sheet should be approximately 30 by 30 centimeters.
- 13. Fold up the edges of the foil slightly.
- 14. Distribute the cooked vegetables evenly across the 4 foil sheets.
- 15. Rinse the lengfish fillets under running water.
- 16. Pat the fillets dry with a kitchen towel.
- 17. Place the fish fillets on top of the vegetables.
- 18. Season the fillets with salt and pepper.
- 19. Wash the lemongrass.
- 20. Remove the tough outer leaves from the lemongrass.
- 21. Finely chop the soft inner part of the lemongrass.
- 22. Sprinkle the chopped lemongrass over the fish fillets.
- 23. Drizzle 2 tablespoons of vegetable broth over each portion.
- 24. Fold the aluminum foil tightly into packets.
- 25. Place the packets on the hot grill.
- 26. Grill the packets for 12 to 15 minutes.
