🍽️ Lemon Meringue Pie

Ingredients
- 200 g flour
- 80 g sugar
- 1 pinch salt
- 125 g butter
- 3 eggs
- 150 g condensed milk
- 4 tbsp lemon juice
- untreated lemons (zested peel)
- 4 tbsp powdered sugar
- flour (for rolling out)
- fat (for the pan)
Instructions
- 1. Preheat the oven to 200 degrees.
- 2. Mix flour, sugar, and salt in a bowl.
- 3. Add the butter and knead everything into a dough.
- 4. Add a little cold water if the dough is too dry.
- 5. Dust the work surface with a little flour.
- 6. Roll out the dough into a round shape.
- 7. Grease a springform pan or a glass pie dish well.
- 8. Place the dough into the pan.
- 9. Press a rim about 2 cm high along the sides.
- 10. Bake the pastry base for approx. 10 minutes in the preheated oven.
- 11. Separate two eggs and set aside the yolks.
- 12. Whisk the third egg together with the two yolks until frothy.
- 13. Stir in the condensed milk.
- 14. Add the lemon juice and stir.
- 15. Fold in the lemon zest.
- 16. Remove the pre-baked pastry base from the oven.
- 17. Pour the lemon filling into the pastry base.
- 18. Bake the pie for another 6 minutes.
- 19. Whisk the egg whites with a pinch of salt until stiff.
- 20. Mix the powdered sugar into the egg whites.
- 21. Remove the pie from the oven again.
- 22. Spread the meringue mixture evenly over the cream.
- 23. Bake the pie for another 20 minutes.
- 24. Let the pie cool completely in the pan.
- 25. Serve the pie cold.
