  1. 1. Preheat the oven to 200 degrees.
  2. 2. Mix flour, sugar, and salt in a bowl.
  3. 3. Add the butter and knead everything into a dough.
  4. 4. Add a little cold water if the dough is too dry.
  5. 5. Dust the work surface with a little flour.
  6. 6. Roll out the dough into a round shape.
  7. 7. Grease a springform pan or a glass pie dish well.
  8. 8. Place the dough into the pan.
  9. 9. Press a rim about 2 cm high along the sides.
  10. 10. Bake the pastry base for approx. 10 minutes in the preheated oven.
  11. 11. Separate two eggs and set aside the yolks.
  12. 12. Whisk the third egg together with the two yolks until frothy.
  13. 13. Stir in the condensed milk.
  14. 14. Add the lemon juice and stir.
  15. 15. Fold in the lemon zest.
  16. 16. Remove the pre-baked pastry base from the oven.
  17. 17. Pour the lemon filling into the pastry base.
  18. 18. Bake the pie for another 6 minutes.
  19. 19. Whisk the egg whites with a pinch of salt until stiff.
  20. 20. Mix the powdered sugar into the egg whites.
  21. 21. Remove the pie from the oven again.
  22. 22. Spread the meringue mixture evenly over the cream.
  23. 23. Bake the pie for another 20 minutes.
  24. 24. Let the pie cool completely in the pan.
  25. 25. Serve the pie cold.
