🍽️ Crispy Lemon Meringue Pie

Ingredients
- 150 g flour
- 1 tbsp powdered sugar
- 1 tbsp cold water
- 125 g cold butter
- butter (for the pan)
- 6 egg yolks
- 1 can sweetened condensed milk (400 g)
- 4 limes
- 6 egg whites
- 175 g sugar
- 0.25 tsp baking powder
- dried legumes (e.g. peas)
Instructions
- 1. Put flour, powdered sugar, water, and small cubes of butter into a bowl.
- 2. Knead the ingredients quickly into a smooth dough.
- 3. Shape the dough into a ball.
- 4. Wrap the dough ball in plastic wrap.
- 5. Place the dough in the refrigerator for 1 hour.
- 6. Preheat the oven to 200 degrees.
- 7. Roll out the dough between two layers of plastic wrap.
- 8. Grease the pie dish.
- 9. Place the rolled-out dough into the dish.
- 10. Prick the dough base several times with a fork.
- 11. Cut baking paper to fit the size of the dish.
- 12. Place the baking paper on the dough.
- 13. Cover the paper generously with legumes as baking weights.
- 14. Bake the base in the preheated oven on the lower rack for approx. 15 minutes.
- 15. Remove the base from the oven.
- 16. Remove the legumes and the baking paper.
- 17. Bake the base for another 10 minutes.
- 18. Let the base cool down a bit.
- 19. Put the egg yolks in a bowl.
- 20. Whip the egg yolks thickly with the condensed milk.
- 21. Wash the limes thoroughly with hot water.
- 22. Dry the limes.
