🍰 Leichter Apple Cake with Quark

Ingredients
- 125 g Skyr
- 3 tbsp Milk
- 2 Egg yolks
- 60 ml Rapeseed oil
- 90 g Coconut blossom sugar
- 1 pinch Salt
- 0.5 tsp Vanilla powder
- 200 g Spelt wholemeal flour
- 1.5 tsp Baking powder
- 750 g tart apples
- 3 tbsp Lemon juice
- 250 g Quark (20 % fat)
- 200 g Kefir
- 3 Eggs
- 1 packet Vanilla pudding powder
- 1 tbsp Liquid honey
Instructions
- 1. Mix quark (a fresh cheese similar to cottage cheese) with milk, one egg yolk, oil, 40 g coconut blossom sugar, a pinch of salt, and vanilla powder in a bowl.
- 2. Gently fold in flour and baking powder, then knead everything into a soft dough using the dough hooks of your mixer.
- 3. Place the dough in the refrigerator for 30 minutes.
- 4. Line the bottom of your springform pan with baking paper.
- 5. Roll out about two-thirds of the dough and place it in the pan.
- 6. Prick the dough base several times with a fork.
- 7. Pre-bake it in the preheated oven at 180 °C (convection: 160 °C; gas: setting 2–3) for about 20 minutes.
- 8. Wash the apples, peel them, cut them into quarters, and remove the cores.
- 9. Cut one apple lengthwise into 3 mm thin slices for decoration.
- 10. Cut the remaining apple quarters crosswise into thin slices and drizzle them with 2 tbsp lemon juice.
- 11. Whisk the quark (20% fat) with kefir, eggs, the remaining coconut blossom sugar, 1 tbsp lemon juice, and pudding powder until smooth and free of lumps.
- 12. Brush the pre-baked dough base at the edge with egg yolk.
- 13. Roll out the remaining dough and place it as a border in the springform pan, pressing it down slightly.
- 14. Fill the apple slices into the pan, pour the quark-kefir mixture over them, and arrange the reserved apple slices in rosettes on top.
- 15. Bake the cake in the oven at 180 °C (convection: 160 °C; gas: setting 2–3) for about 40 minutes.
- 16. Brush the cake with warmed honey 10 minutes before the end of the baking time.
