  1. 1. Mix quark (a fresh cheese similar to cottage cheese) with milk, one egg yolk, oil, 40 g coconut blossom sugar, a pinch of salt, and vanilla powder in a bowl.
  2. 2. Gently fold in flour and baking powder, then knead everything into a soft dough using the dough hooks of your mixer.
  3. 3. Place the dough in the refrigerator for 30 minutes.
  4. 4. Line the bottom of your springform pan with baking paper.
  5. 5. Roll out about two-thirds of the dough and place it in the pan.
  6. 6. Prick the dough base several times with a fork.
  7. 7. Pre-bake it in the preheated oven at 180 °C (convection: 160 °C; gas: setting 2–3) for about 20 minutes.
  8. 8. Wash the apples, peel them, cut them into quarters, and remove the cores.
  9. 9. Cut one apple lengthwise into 3 mm thin slices for decoration.
  10. 10. Cut the remaining apple quarters crosswise into thin slices and drizzle them with 2 tbsp lemon juice.
  11. 11. Whisk the quark (20% fat) with kefir, eggs, the remaining coconut blossom sugar, 1 tbsp lemon juice, and pudding powder until smooth and free of lumps.
  12. 12. Brush the pre-baked dough base at the edge with egg yolk.
  13. 13. Roll out the remaining dough and place it as a border in the springform pan, pressing it down slightly.
  14. 14. Fill the apple slices into the pan, pour the quark-kefir mixture over them, and arrange the reserved apple slices in rosettes on top.
  15. 15. Bake the cake in the oven at 180 °C (convection: 160 °C; gas: setting 2–3) for about 40 minutes.
  16. 16. Brush the cake with warmed honey 10 minutes before the end of the baking time.
