🍽️ Light Vinaigrette

Ingredients
- 2 Oranges
- 1 tbsp grainy Dijon mustard
- 2 tbsp white balsamic vinegar
- salt
- pepper
- 75 ml cold-pressed olive oil
Instructions
- 1. Squeeze the oranges.
- 2. Measure out 175 milliliters of juice.
- 3. Pour the juice into a small saucepan.
- 4. Place the saucepan over medium heat.
- 5. Boil the juice down until only about one third remains.
- 6. Stir mustard, balsamic vinegar, salt, and pepper into the reduced liquid.
- 7. Remove the saucepan from the heat.
- 8. Slowly whisk in the olive oil drop by drop.
- 9. Alternatively, put the reduced juice, mustard, vinegar, salt, pepper, and olive oil into a jar with a screw-top lid.
- 10. Shake the jar vigorously until everything is mixed.
