  2. 2. Measure out 175 milliliters of juice.
  3. 3. Pour the juice into a small saucepan.
  4. 4. Place the saucepan over medium heat.
  5. 5. Boil the juice down until only about one third remains.
  6. 6. Stir mustard, balsamic vinegar, salt, and pepper into the reduced liquid.
  7. 7. Remove the saucepan from the heat.
  8. 8. Slowly whisk in the olive oil drop by drop.
  9. 9. Alternatively, put the reduced juice, mustard, vinegar, salt, pepper, and olive oil into a jar with a screw-top lid.
  10. 10. Shake the jar vigorously until everything is mixed.
