🍽️ Light Mushroom Sauce

Ingredients
- 300 g mushrooms
- 1 tbsp lemon juice
- 1 large onion
- 1 tbsp sunflower oil
- 1 tbsp butter
- 200 ml cold vegetable broth
- 1 tbsp flour
- 200 g yogurt
- 1 tbsp crème fraîche
- 1 tsp hot mustard
- 1 tsp tomato paste
- salt
- 1 pinch cayenne pepper
Instructions
- 1. Slice the mushrooms thinly.
- 2. Mix the mushroom slices with the lemon juice.
- 3. Dice the onion.
- 4. Heat the oil and butter in a large pan.
- 5. Sauté the mushrooms and onion briefly over high heat.
- 6. Whisk the broth and flour together until the flour is completely dissolved.
- 7. Stir in the crème fraîche and yogurt.
- 8. Pour the liquid over the mushrooms and onion in the pan.
- 9. Cook the sauce while stirring constantly until it becomes creamy.
- 10. Stir in the mustard and tomato paste.
- 11. Season the sauce with salt and cayenne pepper.
- 12. Serve the sauce immediately.
