Ingredients
- 200 g Skyr
- 4 egg yolks
- 1 pinch cayenne pepper
- salt
- 0.5 lemon
- 1 tbsp white wine vinegar
Instructions
- 1. Place the quark in a fine sieve over a bowl.
- 2. Let the quark drain for four hours.
- 3. Place the eggs in a small pot.
- 4. Cover the eggs with water.
- 5. Bring the water to a boil.
- 6. Boil the eggs for exactly nine minutes.
- 7. Rinse the eggs under cold water to stop the cooking.
- 8. Peel the cooled eggs.
- 9. Cut the eggs in half.
- 10. Carefully scoop out the yolks with a teaspoon.
- 11. Place the egg yolks in a bowl.
- 12. Use the egg whites for another purpose, such as chopping them for a salad.
- 13. Add one to two tablespoons of water to the egg yolks.
- 14. Mash the egg yolks into a creamy paste using a wooden spoon.
- 15. Stir the mixture until smooth with cayenne pepper.
- 16. Stir in the drained quark gradually.
- 17. Season the mixture with salt.
- 18. Squeeze the lemon.
- 19. Measure out one to two teaspoons of lemon juice.
- 20. Add the lemon juice and vinegar to the quark mixture.
- 21. Mix everything well.
- 22. Chill the light mayonnaise for two to three hours.
