🍽️ Tender Pointed Cabbage Rolls with Fried Liver and Apples

Ingredients
- 1 Savoy cabbage (à 750 g)
- Salt
- 300 g whipping cream
- 3 tbsp grainy mustard (à 15 g)
- Nutmeg
- 3 Apples
- 0.5 bunch Sage (10 g)
- 500 g Veal liver
- 1 tbsp spelt whole wheat flour (à 10 g)
- 2 tbsp Butter (à 15 g)
- Pepper
Instructions
- 1. Remove the outer leaves of the pointed cabbage.
- 2. Halve the pointed cabbage and cut out the hard core.
- 3. Cut the cabbage into thin strips.
- 4. Place the cabbage strips in boiling salted water and cook for 3 to 4 minutes.
- 5. Immediately shock the cabbage with cold water to stop the cooking process.
- 6. Let the cabbage drain well in a colander.
- 7. Place the drained cabbage into a pot.
- 8. Add cream and mustard to the cabbage.
- 9. Season the mixture with salt and a pinch of freshly grated nutmeg.
- 10. Wash the apples thoroughly.
- 11. Remove the core of the apples using a corer.
- 12. Slice the apples into thin rounds.
- 13. Wash the sage leaves.
- 14. Shake the sage leaves dry.
- 15. Carefully pluck the leaves from the stems.
- 16. Remove visible veins from the center of the liver.
- 17. Peel off the outer membrane of the liver.
- 18. Slice the liver into approximately half-centimeter thick pieces.
- 19. Pat the liver slices dry with kitchen paper.
- 20. Coat the liver slices in flour until lightly covered.
- 21. Shake off any excess flour from the slices.
- 22. Divide the butter between two frying pans.
- 23. Heat both frying pans.
- 24. Fry the liver slices in the first pan for 2 minutes on each side over medium heat.
- 25. Salt and pepper the liver as soon as you flip it.
- 26. Fry the apple slices in the second pan for 2 to 3 minutes on each side over medium heat.
- 27. Add the sage leaves to the hot butter in the apple pan to fry them along with the apples.
- 28. Finally season the apple slices with pepper.
- 29. Bring the cabbage in the pot to a boil.
- 30. Let the cabbage simmer gently on low heat for 1 to 2 minutes.
- 31. Taste the cabbage again and adjust with salt.
- 32. Arrange the warm cabbage as a base on the plates.
- 33. Distribute the fried liver and apple slices along with the sage leaves over the cabbage.
