  1. 1. Remove the outer leaves of the pointed cabbage.
  2. 2. Halve the pointed cabbage and cut out the hard core.
  3. 3. Cut the cabbage into thin strips.
  4. 4. Place the cabbage strips in boiling salted water and cook for 3 to 4 minutes.
  5. 5. Immediately shock the cabbage with cold water to stop the cooking process.
  6. 6. Let the cabbage drain well in a colander.
  7. 7. Place the drained cabbage into a pot.
  8. 8. Add cream and mustard to the cabbage.
  9. 9. Season the mixture with salt and a pinch of freshly grated nutmeg.
  10. 10. Wash the apples thoroughly.
  11. 11. Remove the core of the apples using a corer.
  12. 12. Slice the apples into thin rounds.
  13. 13. Wash the sage leaves.
  14. 14. Shake the sage leaves dry.
  15. 15. Carefully pluck the leaves from the stems.
  16. 16. Remove visible veins from the center of the liver.
  17. 17. Peel off the outer membrane of the liver.
  18. 18. Slice the liver into approximately half-centimeter thick pieces.
  19. 19. Pat the liver slices dry with kitchen paper.
  20. 20. Coat the liver slices in flour until lightly covered.
  21. 21. Shake off any excess flour from the slices.
  22. 22. Divide the butter between two frying pans.
  23. 23. Heat both frying pans.
  24. 24. Fry the liver slices in the first pan for 2 minutes on each side over medium heat.
  25. 25. Salt and pepper the liver as soon as you flip it.
  26. 26. Fry the apple slices in the second pan for 2 to 3 minutes on each side over medium heat.
  27. 27. Add the sage leaves to the hot butter in the apple pan to fry them along with the apples.
  28. 28. Finally season the apple slices with pepper.
  29. 29. Bring the cabbage in the pot to a boil.
  30. 30. Let the cabbage simmer gently on low heat for 1 to 2 minutes.
  31. 31. Taste the cabbage again and adjust with salt.
  32. 32. Arrange the warm cabbage as a base on the plates.
  33. 33. Distribute the fried liver and apple slices along with the sage leaves over the cabbage.
