  1. 1. Put sugar and 100 milliliters of water into a pot.
  2. 2. Heat the mixture until the sugar is completely dissolved.
  3. 3. Take the bowl with the egg yolks.
  4. 4. Whisk the egg yolks with the hot sugar water.
  5. 5. Place the bowl over a pot with hot water (water bath).
  6. 6. Beat the cream until thick and foamy.
  7. 7. Break the marzipan into small pieces.
  8. 8. Stir in the marzipan gradually.
  9. 9. Add the gingerbread spice.
  10. 10. Place the bowl in cold water.
  11. 11. Continue stirring until the cream has cooled down.
  12. 12. Whip the cream until stiff.
  13. 13. Gently fold the cream into the mixture.
  14. 14. Line a loaf pan with aluminum foil.
  15. 15. Pour the mixture into the pan.
  16. 16. Freeze the parfait overnight in the freezer.
  17. 17. Serve the parfait with the cranberry sauce.
  18. 18. Garnish it with lemon balm.
