🍰 Lebkuchen Parfait with Cranberry Sauce

Ingredients
- 125 g Sugar
- 4 Egg yolks
- 100 g soft marzipan base
- 1 Gingerbread spice (15 g)
- 0.375 l whipping cream
- 125 g currant jelly
- 1 tbsp Honey
- 0.5 bag or Cranberries Cranberrys (170 g)
- Carambola slice (for decoration)
- Lemon balm (for decoration)
Instructions
- 1. Put sugar and 100 milliliters of water into a pot.
- 2. Heat the mixture until the sugar is completely dissolved.
- 3. Take the bowl with the egg yolks.
- 4. Whisk the egg yolks with the hot sugar water.
- 5. Place the bowl over a pot with hot water (water bath).
- 6. Beat the cream until thick and foamy.
- 7. Break the marzipan into small pieces.
- 8. Stir in the marzipan gradually.
- 9. Add the gingerbread spice.
- 10. Place the bowl in cold water.
- 11. Continue stirring until the cream has cooled down.
- 12. Whip the cream until stiff.
- 13. Gently fold the cream into the mixture.
- 14. Line a loaf pan with aluminum foil.
- 15. Pour the mixture into the pan.
- 16. Freeze the parfait overnight in the freezer.
- 17. Serve the parfait with the cranberry sauce.
- 18. Garnish it with lemon balm.
- 19. Add slices of starfruit.
