🍰 Heavenly Lebkuchen Confection Squares

Ingredients
- 100 g liquid honey
- 40 ml walnut oil
- 100 g sugar
- 250 g flour
- 2 tsp baking powder
- 50 g ground hazelnuts
- 50 g citron (finely chopped)
- 3 tbsp gingerbread spice
- 2 eggs
- 150 ml milk
- 100 g powdered sugar
- 3 tbsp lemon juice
- almond slices
- maraschino cherries
Instructions
- 1. Put honey, oil, and sugar into a pot.
- 2. Heat the mixture while stirring constantly until it boils briefly.
- 3. Remove the pot from the heat and let the honey mixture cool down.
- 4. Mix flour and baking powder in a separate bowl.
- 5. Add the ground hazelnuts, citron, lebkuchen spice, eggs, and 130 milliliters of milk to the flour mixture.
- 6. Stir the cooled honey mixture into the flour mixture using the dough hooks of your hand mixer.
- 7. Knead everything into a smooth dough.
- 8. Cover the bowl and place it in the refrigerator for 1 hour.
- 9. Line a baking tray with baking paper.
- 10. Fold a strip of aluminum foil several times and place it across the tray to demarcate three-quarters of the area.
- 11. Distribute the dough evenly over the demarcated part of the tray.
- 12. Press the dough flat.
- 13. Brush the surface of the dough with a little milk.
- 14. Preheat the oven to 200 degrees.
- 15. Bake the confection for approx. 20 minutes in the center of the oven until golden brown.
- 16. Remove the tray from the oven.
- 17. Let the confection cool completely on the tray.
- 18. Cut the cooled confection into squares with a side length of 4 x 4 centimeters.
- 19. Mix powdered sugar with lemon juice to make a glaze.
- 20. Brush the lebkuchen pieces with the glaze.
- 21. Decorate the pieces immediately with almonds and halved maraschino cherries.
- 22. Let the confection dry completely.
