  1. 1. Heat honey, sugar, and butter in a pot while stirring until the sugar is completely dissolved. Remove from heat and let cool. Mix flour and gingerbread spice in a large bowl. Dissolve saleratus (a leavening agent) in two tablespoons of water and add it to the flour mixture. Whisk the egg and add it along with the cooled honey-sugar mixture to the flour. Knead everything into a smooth dough. Wrap the dough in plastic wrap and refrigerate overnight.
  2. 2. Preheat the oven to 180 degrees Celsius fan mode. Line a baking sheet (30x40 cm) with baking paper.
  3. 3. Divide the dough into two equal halves. Roll each half out thinly enough to fit the baking sheet. Place the rolled-out dough on the prepared tray. Bake for about 15 minutes.
  4. 4. Cut two rectangles (approx. 15x20 cm each) and two isosceles triangles (side length 15 cm) from a sturdy cardboard. Cut out small figures, a chimney, or trees from the leftover dough pieces as desired.
  5. 5. Place the cardboard pieces immediately onto a still-hot baked gingerbread sheet. Cut the shapes directly out of the dough. The dough must be hot to prevent breaking. Do not forget to cut out windows and doors. Also cut out a rectangle (approx. 20x15 cm) as the base plate.
  6. 6. Let the cut-out dough pieces cool completely on a wire rack. Beat the egg whites in a clean bowl until stiff. While continuing to beat, sift in powdered sugar until a thick icing forms. Color the icing if desired. Fill some icing into a piping bag and outline the windows and door with it.
  7. 7. Glue the side walls of the house together using the icing. Decorate the edges with the remaining icing.
  8. 8. Brush the roof with some icing. Decorate the house as desired with Turkish delight, chocolate lentils, chocolate bars, and wafers. Let the house dry thoroughly afterwards.
