🍰 Craft Gingerbread House

Ingredients
- 500 g honey
- 500 g brown sugar
- 300 g butter
- 1 kg flour
- 3 tsp gingerbread spice
- 1 untreated lemon (zest)
- 50 g cocoa powder
- 2 eggs
- 2 tsp saltpeter
- 4 tbsp rum
- 450 g powdered sugar
- juice of one lemon
- 1 egg white
- 200 g powdered sugar
- 1 tsp lemon juice
- 1 drop food coloring (for coloring)
- fruit gum (in various shapes and colors)
- butter cookies (in various shapes)
- grain cinnamon cookie
- shortbread (Scottish butter cookie)
- sugar writing icing
- ready-made fondant
- sauce gingerbread
- sugar pearls
Instructions
- 1. Heat honey, butter, and sugar in a small saucepan until the sugar is completely dissolved.
- 2. Pour the warm mixture into a mixing bowl and let it cool down.
- 3. Add flour, spices, and cocoa to the cooled honey mixture.
- 4. Mix everything thoroughly using the dough hook of your hand mixer.
- 5. Dissolve sal ammoniac (pottasche) in rum and add the solution to the dough.
- 6. Continue kneading the dough on the highest speed until it shines and no longer sticks.
- 7. Cover the bowl with plastic wrap.
- 8. Let the dough rest in the refrigerator overnight.
- 9. Prepare a sheet in DIN A5 format for the roof and side walls.
- 10. Cut paper in postcard size with an attached triangle for the gable sides.
- 11. Shape the triangle to be sharp or flat, depending on your preference.
- 12. Cut several strips from thick cardboard that are about 3 cm wide and 10 cm long.
- 13. Lightly score the middle of the cardboard strips with a knife.
- 14. Fold the cardboard strips at the scored lines to create stable angles.
- 15. Sprinkle flour on the work surface.
- 16. Roll out the dough in portions to a thickness of about 5 mm.
- 17. Place the template on the dough.
- 18. Cut out two roof halves and side walls in DIN A5 size one after the other.
- 19. Cut out two gable sides.
- 20. Place the dough pieces on a greased baking sheet.
- 21. Cut doors and windows directly into the dough on the baking sheet.
- 22. Knead the dough scraps together.
- 23. Roll out the combined dough again.
- 24. Cut out a large floor plate measuring 20 x 30 cm.
- 25. Cut out small trees as decoration.
- 26. Preheat the oven to 180 degrees Celsius.
- 27. Bake the individual parts in portions for 20 minutes.
- 28. Let the baked parts cool down on the baking sheet.
- 29. Stir powdered sugar with lemon juice until a thick, smooth mass forms.
- 30. Glue the side walls and gable sides onto the gingerbread plate using the sugar mixture.
- 31. Use the cardboard template as support for the walls.
- 32. Place books against the walls to stabilize them.
- 33. Wait until the sugar glaze has dried slightly.
- 34. Glue the roof surfaces on.
- 35. For House 1: Roll out ready-made fondant.
- 36. Brush the house surfaces with piping icing.
- 37. Glue the fondant onto the house surfaces.
- 38. Decorate the house with gummy bears, cookies, and icing writing.
- 39. Glue cereal cinnamon cookies onto the roof in a shingle pattern using piping icing.
- 40. Decorate the house as desired with piping icing and icing writing.
- 41. For House 2: Slice molasses gingerbread into thin slices.
- 42. Glue the gingerbread slices onto the house wall in a shingle pattern using piping icing.
- 43. Trim round butter cookies to size.
- 44. Decorate the roof with the butter cookies.
- 45. Decorate the house as desired with cookies, icing writing, sugar pearls, and piping icing.
- 46. For the piping icing: Stir egg white, powdered sugar, and lemon juice until smooth.
- 47. The quantity for House 3 is freely selectable and depends on the desired house size.
- 48. Assemble grissini sticks into a house wall framework using fondant paste.
- 49. Spread piping icing on square wafer biscuits.
- 50. Arrange sesame sticks in rows on the wafer biscuits.
- 51. Let the construction dry.
- 52. Attach the dried gable to the house using fondant ropes.
- 53. Color fondant with red food coloring.
- 54. Shape the colored fondant into a thick rope.
- 55. Press pistachios decoratively into the fondant rope for the chimney.
- 56. Attach the chimney to the house with piping icing.
- 57. Let the chimney dry.
- 58. Decorate the house with piping icing, cookies, icing writing, and gummy bears.
