Ingredients
- 1 level tbsp Ammonium carbonate
- 4 tbsp Milk
- 2 tsp Potash
- 4 tbsp Kirsch
- 500 Honey
- 2 tbsp Powdered sugar (heaped)
- 750 g Flour
- 1 packet Gingerbread spice
- 2 Egg yolks
- Flour (for the work surface)
- 2 Egg whites
- 260 g Powdered sugar
- 1 tbsp Lemon juice
- blue sugar almonds
- white sugar almonds
- Meringue dots
- Sugar straw (from the confectioner)
- Blue sprinkles
Instructions
- 1. Dissolve the hartshorn salt in the milk.
- 2. Dissolve the potash in the kirsch.
- 3. Warm the honey, powdered sugar, and 50 milliliters of water in a small saucepan until they dissolve.
- 4. Mix the flour with the gingerbread spice.
- 5. Sift the flour mixture into a bowl.
- 6. Add the dissolved honey-sugar mix and the egg yolk.
- 7. Knead the ingredients into a dough.
- 8. Add the milk-hartshorn salt mixture to the dough and knead it in vigorously.
- 9. Add the kirsch-potash mixture to the dough and knead it in vigorously.
- 10. Shape the dough into two equal-sized balls.
- 11. Wrap each dough ball individually in plastic wrap.
- 12. Let the dough rest in the refrigerator for 2 to 3 hours.
- 13. Dust a work surface with flour.
- 14. Take one dough ball and roll it out to about 0.5 centimeters thick.
- 15. Cut out a front panel from the rolled-out dough sheet.
- 16. Cut out a back panel.
- 17. Cut out two side panels.
- 18. Cut out two roof panels.
- 19. Cut out a floor panel.
- 20. Cut window openings into the respective dough parts.
- 21. Cut door openings into the respective dough parts.
- 22. Repeat the rolling and cutting with the second dough ball.
- 23. Cut out a chimney from the dough scraps.
- 24. Cut out a witch from the dough scraps.
- 25. Cut out a cat from the dough scraps.
- 26. Cut out trees from the dough scraps.
- 27. Line a baking tray with baking paper.
- 28. Place the house dough parts on the prepared tray.
- 29. Place the decoration dough parts on the prepared tray.
- 30. Preheat the oven to 180 degrees Celsius (convection 160 degrees Celsius).
- 31. Bake the dough parts for about 15 minutes until medium brown.
- 32. Let the baked parts cool completely.
- 33. Whip the egg white with the powdered sugar and a few drops of lemon juice into a stiff foam.
- 34. Fill the egg white mixture into a piping bag with a round tip.
- 35. Use the egg white mixture to mortar the house walls.
- 36. Attach the roof with the egg white mixture.
- 37. Attach the door with the remaining egg white mixture.
- 38. Attach the window shutters with the remaining egg white mixture.
- 39. Decorate the house as you like with almonds.
- 40. Decorate the house as you like with meringues.
- 41. Decorate the house as you like with the cut-out gingerbread figures.
- 42. Let the icing dry completely.
- 43. Dust the finished house with powdered sugar as snow.
- 44. Decorate the house as you like with sprinkles.
- 45. Serve the gingerbread house.
