  1. 1. Heat honey, butter, and sugar in a small saucepan until the sugar has completely dissolved.
  2. 2. Pour the warm mixture into a mixing bowl and let it cool down.
  3. 3. Add flour, spices, and cocoa to the cooled honey mixture.
  4. 4. Mix the ingredients thoroughly using the dough hook of a hand mixer.
  5. 5. Dissolve saleratus (potash) in rum and add the solution to the dough.
  6. 6. Continue kneading the dough on the highest speed until it shines and no longer sticks.
  7. 7. Cover the bowl with plastic wrap.
  8. 8. Let the dough rest overnight in the refrigerator.
  9. 9. Prepare a sheet of paper in DIN A5 format for the roof and side walls.
  10. 10. Cut paper in postcard size with an attached triangle for the gable ends.
  11. 11. Decide on a sharp or flat triangle shape.
  12. 12. Cut several strips from thick cardboard with a width of approx. 3 cm and a length of approx. 10 cm.
  13. 13. Lightly score the middle of the cardboard strips with a knife.
  14. 14. Crease the strips at the scored lines to create angles.
  15. 15. Sprinkle flour on the work surface.
  16. 16. Roll out the dough in portions to a thickness of approx. 5 mm.
  17. 17. Place the template on the dough.
  18. 18. Cut out two roof halves and side walls in DIN A5 size one after the other.
  19. 19. Cut out two gable ends.
  20. 20. Place the dough pieces on a greased baking sheet.
  21. 21. Cut out doors and windows directly on the baking sheet.
  22. 22. Knead the dough scraps together.
  23. 23. Roll out the combined dough again.
  24. 24. Cut out a large floor plate measuring 20 x 30 cm.
  25. 25. Cut out small trees as decoration.
  26. 26. Preheat the oven to 180 degrees Celsius.
  27. 27. Bake the individual pieces in portions for 20 minutes.
  28. 28. Let the baked pieces cool down on the baking sheet.
  29. 29. Stir powdered sugar with lemon juice until a thick liquid forms.
  30. 30. Glue the side walls and gable ends to the gingerbread base using the sugar mixture.
  31. 31. Use the cardboard angles for support while gluing.
  32. 32. Place books against the walls to stabilize them.
  33. 33. Wait until the icing has dried slightly.
  34. 34. Glue the roof sections on.
  35. 35. Glue the cut-out doors and windows on.
  36. 36. Decorate the house with icing from a piping bag.
  37. 37. Apply gum paste and other decorations.
  38. 38. Dust the house generously with powdered sugar.
