🍰 Baking Gingerbread Men

Ingredients
- 250 g Honey
- 250 g brown sugar
- 150 g Butter
- 100 g ground almond kernels
- 450 g Flour
- 1 tsp Cinnamon powder
- 2 tsp Gingerbread spice
- 1 untreated Lemon (zest)
- 1 tbsp Cocoa powder
- 1 Egg
- 1 tsp Potash
- 2 tbsp Rum
- 200 g Powdered sugar
- 2 tbsp Lemon juice
- red and blue food coloring
- Flour (for working)
Instructions
- 1. Put butter pieces, honey, and sugar into a saucepan.
- 2. Heat the mixture while stirring until the sugar has completely dissolved.
- 3. Pour the warm mixture into a large mixing bowl.
- 4. Let the bowl cool down.
- 5. Add almonds, 400 g flour, cinnamon, gingerbread spice, lemon zest, cocoa, and one egg to the cooled mixture.
- 6. Knead the ingredients thoroughly using a hand mixer with dough hooks.
- 7. If the dough is too sticky, add a little more flour.
- 8. Dissolve the potash in rum in a small bowl.
- 9. Add the dissolved potash to the dough.
- 10. Continue kneading the dough until it shines and no longer sticks.
- 11. Cover the bowl with cling film.
- 12. Let the dough rest overnight in the refrigerator.
- 13. Line two baking sheets with baking paper.
- 14. Preheat the oven to 180°C fan-forced.
- 15. Roll out the dough on a floured work surface with a rolling pin to a thickness of about 3 mm.
- 16. Cut out men shapes from the dough.
- 17. Place the figures on the prepared baking sheets.
- 18. Bake the gingerbread for 15 to 20 minutes in the oven.
- 19. Take the cookies out of the oven.
- 20. Let the gingerbread cool completely.
- 21. Mix powdered sugar and lemon juice to form a thick glaze.
- 22. Divide the glaze into three equal parts.
- 23. Color each part with a different food coloring.
- 24. Fill the colored glazes into three separate freezer bags.
- 25. Cut a small corner off each bag.
- 26. Decorate the cooled gingerbread men with the glaze.
- 27. Let the decorated cookies dry on a wire rack.
