  1. 1. Put butter pieces, honey, and sugar into a saucepan.
  2. 2. Heat the mixture while stirring until the sugar has completely dissolved.
  3. 3. Pour the warm mixture into a large mixing bowl.
  4. 4. Let the bowl cool down.
  5. 5. Add almonds, 400 g flour, cinnamon, gingerbread spice, lemon zest, cocoa, and one egg to the cooled mixture.
  6. 6. Knead the ingredients thoroughly using a hand mixer with dough hooks.
  7. 7. If the dough is too sticky, add a little more flour.
  8. 8. Dissolve the potash in rum in a small bowl.
  9. 9. Add the dissolved potash to the dough.
  10. 10. Continue kneading the dough until it shines and no longer sticks.
  11. 11. Cover the bowl with cling film.
  12. 12. Let the dough rest overnight in the refrigerator.
  13. 13. Line two baking sheets with baking paper.
  14. 14. Preheat the oven to 180°C fan-forced.
  15. 15. Roll out the dough on a floured work surface with a rolling pin to a thickness of about 3 mm.
  16. 16. Cut out men shapes from the dough.
  17. 17. Place the figures on the prepared baking sheets.
  18. 18. Bake the gingerbread for 15 to 20 minutes in the oven.
  19. 19. Take the cookies out of the oven.
  20. 20. Let the gingerbread cool completely.
  21. 21. Mix powdered sugar and lemon juice to form a thick glaze.
  22. 22. Divide the glaze into three equal parts.
  23. 23. Color each part with a different food coloring.
  24. 24. Fill the colored glazes into three separate freezer bags.
  25. 25. Cut a small corner off each bag.
  26. 26. Decorate the cooled gingerbread men with the glaze.
  27. 27. Let the decorated cookies dry on a wire rack.
