  1. 1. Put sugar, honey, and butter into a pot.
  2. 2. Heat the mixture until the sugar has completely dissolved.
  3. 3. Pour the warm mixture into a bowl.
  4. 4. Let the mixture cool down.
  5. 5. Add an egg and flour to the cooled mixture.
  6. 6. Add gingerbread spice.
  7. 7. Dissolve saleratus (potash) in rum or water until you have a smooth liquid.
  8. 8. Add the saleratus solution to the dough.
  9. 9. Knead everything into a firm dough.
  10. 10. Wrap the dough in cling film.
  11. 11. Let the dough rest in the refrigerator overnight.
  12. 12. Preheat the oven to 175 degrees Celsius.
  13. 13. Sprinkle flour on your work surface.
  14. 14. Roll out the dough thinly (about 3 to 4 millimeters thick).
  15. 15. Cut out figure shapes from the dough using cookie cutters.
  16. 16. Bake the figures for about 15 minutes.
  17. 17. Let the baked figures cool down.
  18. 18. Whip egg whites until stiff.
  19. 19. Stir powdered sugar into the egg whites.
  20. 20. Take a portion of the sugar mixture.
  21. 21. Stir in food coloring drop by drop, according to taste.
  22. 22. Brush the cooled figures with the sugar mixture.
  23. 23. Decorate the figures with sugar pearls.
