🍰 Gingerbread Figures

Ingredients
- 500 g flour
- 250 g brown sugar
- 250 g honey
- 150 g butter
- 1 heaped tbsp gingerbread spice
- 1 egg
- 1 level tbsp potash
- 2 tbsp rum (or water)
- 250 g powdered sugar
- 1 egg white
- sugar pearls
- food coloring
Instructions
- 1. Put sugar, honey, and butter into a pot.
- 2. Heat the mixture until the sugar has completely dissolved.
- 3. Pour the warm mixture into a bowl.
- 4. Let the mixture cool down.
- 5. Add an egg and flour to the cooled mixture.
- 6. Add gingerbread spice.
- 7. Dissolve saleratus (potash) in rum or water until you have a smooth liquid.
- 8. Add the saleratus solution to the dough.
- 9. Knead everything into a firm dough.
- 10. Wrap the dough in cling film.
- 11. Let the dough rest in the refrigerator overnight.
- 12. Preheat the oven to 175 degrees Celsius.
- 13. Sprinkle flour on your work surface.
- 14. Roll out the dough thinly (about 3 to 4 millimeters thick).
- 15. Cut out figure shapes from the dough using cookie cutters.
- 16. Bake the figures for about 15 minutes.
- 17. Let the baked figures cool down.
- 18. Whip egg whites until stiff.
- 19. Stir powdered sugar into the egg whites.
- 20. Take a portion of the sugar mixture.
- 21. Stir in food coloring drop by drop, according to taste.
- 22. Brush the cooled figures with the sugar mixture.
- 23. Decorate the figures with sugar pearls.
