Ingredients
- 125 g honey
- 60 g sugar
- 50 g butter
- 250 g flour
- ginger (2 tsp ground each)
- cinnamon (2 tsp ground each)
- 0.5 tsp ground cloves
- 1 anise powder
- 1 pinch salt
- 1 pinch potash
- 1 pinch hartshorn salt
- 1 tbsp milk
- 50 g orange peel
- couverture (dark and white)
Instructions
- 1. Heat honey, sugar, and butter in a pot until the sugar is completely dissolved.
- 2. Let the mixture cool down briefly.
- 3. Dissolve sal ammoniac (pottasche) in the milk.
- 4. Dissolve hartshorn salt (ammonium carbonate) in the same milk.
- 5. Mix the sifted flour with the spices.
- 6. Stir the spice-flour mixture and the milk with the leavening agents into the honey mixture.
- 7. Finely chop the candied orange peel.
- 8. Fold the candied orange peel into the dough.
- 9. Let the dough rest overnight in the refrigerator.
- 10. Roll out the dough on a floured surface.
- 11. Cut the dough into small squares, with side lengths corresponding to the size of the bears.
- 12. Place the squares in the freezer compartment for 10 minutes.
- 13. Place a bear template onto a square.
- 14. Cut out the bear shape using a sharp knife.
- 15. Bake the bears in a hot oven.
- 16. Let the bears cool down completely.
- 17. Decorate the bears as you like.
