  1. 1. Heat honey, sugar, and butter in a pot until the sugar is completely dissolved.
  2. 2. Let the mixture cool down briefly.
  3. 3. Dissolve sal ammoniac (pottasche) in the milk.
  4. 4. Dissolve hartshorn salt (ammonium carbonate) in the same milk.
  5. 5. Mix the sifted flour with the spices.
  6. 6. Stir the spice-flour mixture and the milk with the leavening agents into the honey mixture.
  7. 7. Finely chop the candied orange peel.
  8. 8. Fold the candied orange peel into the dough.
  9. 9. Let the dough rest overnight in the refrigerator.
  10. 10. Roll out the dough on a floured surface.
  11. 11. Cut the dough into small squares, with side lengths corresponding to the size of the bears.
  12. 12. Place the squares in the freezer compartment for 10 minutes.
  13. 13. Place a bear template onto a square.
  14. 14. Cut out the bear shape using a sharp knife.
  15. 15. Bake the bears in a hot oven.
  16. 16. Let the bears cool down completely.
  17. 17. Decorate the bears as you like.
