🍰 Spiced Lebkuchen with Icing

Ingredients
- 200 g honey
- 50 g brown sugar
- 75 g butter
- 1 egg
- 1 tbsp cocoa powder
- 1 tsp ground cinnamon
- 0.25 tsp nutmeg
- 0.25 tsp ground cloves
- 2 tsp potash
- 2 tbsp rum
- 300 g flour
- 100 g chopped almonds
- 50 g citron (finely chopped)
- 50 g candied orange peel (finely chopped)
- 50 round wafer biscuits
- 125 g powdered sugar
- 2 tbsp lemon juice
- 25 maraschino cherries
- 50 g almond slivers
Instructions
- 1. Preheat the oven to 150 degrees Celsius.
- 2. Place honey, brown sugar, and butter in a saucepan.
- 3. Heat the mixture and stir until the sugar has completely dissolved.
- 4. Allow the mixture to cool down.
- 5. Stir in an egg, cocoa powder, and the spices.
- 6. Dissolve baking ammonia (a leavening agent) in rum and stir until smooth.
- 7. Add the baking ammonia and rum mixture to the batter.
- 8. Fold in flour, chopped almonds, candied lemon peel, and candied orange peel.
- 9. Knead all ingredients into a firm dough.
- 10. Dust your work surface with a little flour.
- 11. Place wafer cookies (small, thin wafers) on a baking sheet lined with baking paper.
- 12. Take a tablespoon of dough and place it on each wafer.
- 13. Spread the mixture flat on the wafer.
- 14. Bake the lebkuchen in the preheated oven for 25 to 30 minutes.
- 15. Remove the lebkuchen from the oven and let them cool down completely.
- 16. Whisk powdered sugar with lemon juice to create a thin icing.
- 17. Brush the cooled lebkuchen with the icing.
- 18. Place one halved maraschino cherry on each lebkuchen.
- 19. Decorate the lebkuchen with almond slivers.
