🍰 Small Lebkuchen Muffins

Ingredients
- 200 g honey
- 150 g rock sugar
- 70 g butter
- 1.5 tsp gingerbread spice
- 50 g almond kernels
- 200 g almond kernels
- 250 g flour
- 2 tbsp cocoa powder
- 2 tsp baking powder
- 2 eggs
Instructions
- 1. Put the honey, the rock sugar, and the butter into a saucepan.
- 2. Heat the ingredients until they are completely melted and mixed.
- 3. Stir the gingerbread spice, the ground almonds, and three tablespoons of water into the warm mixture.
- 4. Remove the saucepan from the heat and let the mixture cool down.
- 5. Put the candied almonds into a freezer bag.
- 6. Crush the almonds with a rolling pin until they break into coarse pieces.
- 7. Preheat your oven to 175 degrees Celsius.
- 8. Put the flour, the cocoa powder, and the baking powder into a large bowl.
- 9. Whisk the eggs in a separate small bowl.
- 10. Gradually stir the whisked eggs into the flour mixture.
- 11. Gradually stir the cooled honey mixture into the flour mixture.
- 12. Add the crushed candied almonds.
- 13. Keep one tablespoon of the almonds aside for later garnishing.
- 14. Fill the batter into the greased mini muffin cups.
- 15. Sprinkle the reserved candied almonds on top.
- 16. Bake the muffins in the oven for about 25 minutes.
