Ingredients
- 700 g Honey
- 200 g Sugar
- 200 g Butter
- 2 Eggs
- 2 tbsp Lemon zest
- 2 tbsp Cocoa powder
- 1 tsp Cinnamon
- 1 tsp Clove (ground)
- 1 tsp Cardamom (ground)
- 1 tsp Nutmeg (ground)
- 1 tsp Allspice (ground)
- 1 tsp Coriander (ground)
- 1 tsp Ginger (ground)
- 1 tsp Potash
- 1 tsp Sal ammoniac
- 1 kg Flour
Instructions
- 1. Warm the honey, sugar, and butter over medium heat while stirring constantly. Wait until the sugar is completely dissolved. Then let the mixture cool down until it is only warm to the touch.
- 2. Add the egg, lemon zest, cocoa, and all spices. Dissolve the saltpeter and hartshorn salt in one tablespoon of water. Add this solution along with the flour to the honey mixture. Knead everything into a firm dough.
- 3. Wrap the dough in foil and let it rest for one day at room temperature.
- 4. Knead the dough again. Divide it into two halves. Roll each half on a greased and floured baking sheet (approx. 35 x 45 cm) to a thickness of 1 to 2 millimeters.
- 5. Bake the sheets in the preheated oven at 180 degrees one after the other for 15 to 20 minutes. Remove them and let them cool on the baking sheet.
- 6. Build a gingerbread house from one dough sheet according to the attached drawing (as the base of the rectangle 30 x 40 cm).
- 7. From the second sheet, you can make, for example, a piece of floor plate, decorations, roof shingles, doors, windows, etc. entirely according to your own imagination. The individual pieces are glued together with thick icing (powdered sugar and a little water - try out the mixing ratio!).
