Ingredients

Instructions

  1. 1. Preheat the oven to 180 degrees Celsius. Select the top and bottom heat setting.
  2. 2. Put flour, sugar, almonds, cinnamon, nutmeg, and gingerbread spice into a bowl. Mix the dry ingredients well. Use a spoon to make a small well in the center of the mixture.
  3. 3. Finely chop the candied orange peel. Add the chopped peel along with the honey, egg, and egg yolk to the well.
  4. 4. Dissolve the saleratus (potash) and hartshorn salt in two tablespoons of cold water. Stir this liquid into the remaining ingredients in the bowl.
  5. 5. Knead everything into a smooth, shiny dough. If the dough feels too dry, add a little more water.
  6. 6. Roll the dough out to about one centimeter thick. Cut out fir tree shapes from the dough.
  7. 7. Place the trees on a baking sheet lined with baking paper. Bake them in the preheated oven for approx. 10–12 minutes.
  8. 8. Let the finished gingerbread cookies cool down completely on a wire rack.
  9. 9. Mix powdered sugar and lemon juice to form a thick glaze. Spread it over the cooled fir trees to create a snow effect.
