🍰 Gingerbread Fir Trees

Ingredients
- 300 g rye flour (Type 997)
- 120 g sugar
- 50 g ground almond kernels
- 0.5 tsp cinnamon powder
- 1 pinch nutmeg
- 1 level tsp gingerbread spice
- 20 g candied orange peel
- 150 g honey
- 1 egg
- 1 egg yolk
- 4 g potash
- 4 g sal ammoniac
- 100 g powdered sugar
- 1 tbsp lemon juice
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Select the top and bottom heat setting.
- 2. Put flour, sugar, almonds, cinnamon, nutmeg, and gingerbread spice into a bowl. Mix the dry ingredients well. Use a spoon to make a small well in the center of the mixture.
- 3. Finely chop the candied orange peel. Add the chopped peel along with the honey, egg, and egg yolk to the well.
- 4. Dissolve the saleratus (potash) and hartshorn salt in two tablespoons of cold water. Stir this liquid into the remaining ingredients in the bowl.
- 5. Knead everything into a smooth, shiny dough. If the dough feels too dry, add a little more water.
- 6. Roll the dough out to about one centimeter thick. Cut out fir tree shapes from the dough.
- 7. Place the trees on a baking sheet lined with baking paper. Bake them in the preheated oven for approx. 10–12 minutes.
- 8. Let the finished gingerbread cookies cool down completely on a wire rack.
- 9. Mix powdered sugar and lemon juice to form a thick glaze. Spread it over the cooled fir trees to create a snow effect.
