🍰 Lavender Apple Cake with Crumble Topping

Ingredients
- 250 g Butter
- 150 g Demerara sugar
- 4 Eggs
- 1 Pinch Salt
- 2 tsp Baking powder
- 500 g Spelt flour Type 1050
- 100 ml Milk (3.5% fat)
- 200 g Ground almonds
- 1 kg Apples
- 3 tbsp Lemon juice
- 1 tbsp Cornstarch
- 0.5 tsp Bourbon vanilla powder
- 1 tbsp Honey
- 2 tsp Dried lavender flowers
- 1 tbsp Powdered sugar from Demerara sugar
Instructions
- 1. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced / gas levels 2-3).
- 2. Line a baking tray with baking paper.
- 3. Beat 175 grams of soft butter in a bowl until creamy.
- 4. Add 100 grams of whole cane sugar and the eggs to the butter alternately, mixing well after each addition.
- 5. Add a pinch of salt to the mixture.
- 6. Mix 400 grams of flour with baking powder in a separate bowl.
- 7. Add the flour mixture and the milk gradually to the butter mixture and stir quickly until a smooth batter forms.
- 8. Spread the batter onto the prepared baking tray and smooth it out.
- 9. Sprinkle 50 grams of ground almonds evenly over the batter.
- 10. Peel the apples and cut them into quarters.
- 11. Remove the core from the apple quarters.
- 12. Cut the apple pieces into small cubes.
- 13. Mix the apple pieces with lemon juice, cornstarch, vanilla powder, and honey.
- 14. Spread the apple mixture evenly over the batter.
- 15. Mix 100 grams of flour with the remaining ground almonds, about 80 milliliters of cold water, and the rest of the whole cane sugar.
- 16. Add the remaining butter in small pieces to the crumble mixture.
- 17. Add the lavender flowers.
- 18. Rub the ingredients between your hands to form crumbly streusel.
- 19. Sprinkle the streusel evenly over the apples.
- 20. Bake the cake in the preheated oven for about 50 minutes until golden brown.
- 21. Remove the cake from the oven and let it cool completely.
- 22. Cut the cake into pieces.
- 23. Dust the pieces with powdered sugar before serving.
