🍰 Fluffy Chocolate Lava Cakes

Ingredients
- butter (for the molds)
- 125 g dark chocolate (60–70% cocoa content)
- 125 g butter (plus 2 tbsp for the molds)
- 2 eggs
- 3 egg yolks
- 60 g sugar
- salt
- 25 g spelt flour
Instructions
- 1. Melt the butter.
- 2. Grease 6 small porcelain ramekins with the melted butter.
- 3. Place the greased ramekins in the refrigerator.
- 4. Finely chop the chocolate.
- 5. Place a bowl over a pot of hot water (bain-marie).
- 6. Melt the chopped chocolate together with the remaining butter in the bowl.
- 7. Whisk eggs, egg yolks, sugar, and a pinch of salt in a separate bowl.
- 8. Whisk the egg mixture until creamy for 8 to 10 minutes.
- 9. Gradually fold the melted chocolate-butter mixture into the egg mixture.
- 10. Sift spelt flour over the mixture.
- 11. Gently fold the flour in.
- 12. Fill the mixture into the prepared ramekins.
- 13. Refrigerate the ramekins overnight.
- 14. Preheat the oven to 180 °C.
- 15. Bake the lava cakes for about 15 minutes.
- 16. Watch until the center of the cakes rises slightly.
