  1. 1. Melt the butter.
  2. 2. Grease 6 small porcelain ramekins with the melted butter.
  3. 3. Place the greased ramekins in the refrigerator.
  4. 4. Finely chop the chocolate.
  5. 5. Place a bowl over a pot of hot water (bain-marie).
  6. 6. Melt the chopped chocolate together with the remaining butter in the bowl.
  7. 7. Whisk eggs, egg yolks, sugar, and a pinch of salt in a separate bowl.
  8. 8. Whisk the egg mixture until creamy for 8 to 10 minutes.
  9. 9. Gradually fold the melted chocolate-butter mixture into the egg mixture.
  10. 10. Sift spelt flour over the mixture.
  11. 11. Gently fold the flour in.
  12. 12. Fill the mixture into the prepared ramekins.
  13. 13. Refrigerate the ramekins overnight.
  14. 14. Preheat the oven to 180 °C.
  15. 15. Bake the lava cakes for about 15 minutes.
  16. 16. Watch until the center of the cakes rises slightly.
