🥗 Warm Asparagus Tomato Salad

Ingredients
- 200 g green asparagus
- 0.5 tsp olive oil
- salt
- pepper
- 0.5 lime
- 100 ml Mediterranean vegetable broth
- 0.5 tsp mustard
- 120 g medium tomatoes (2 medium tomatoes)
Instructions
- 1. Wash the asparagus thoroughly.
- 2. Cut off the woody bottom ends of the stalks.
- 3. Peel the bottom third of each asparagus stalk.
- 4. Cut the asparagus into diagonal pieces.
- 5. Heat the oil in a non-stick pan slightly.
- 6. Fry the asparagus in it for about 8 minutes.
- 7. Turn the asparagus frequently while doing so.
- 8. Fry the asparagus until golden brown all over.
- 9. Season the asparagus with salt and pepper.
- 10. Squeeze the half lime.
- 11. Put the lime juice into a small bowl.
- 12. Add the broth to the bowl.
- 13. Add the mustard to the bowl.
- 14. Stir the mixture with a spoon or whisk.
- 15. Wash the tomatoes.
- 16. Quarter the tomatoes.
- 17. Cut out the stem attachments from the tomato quarters.
- 18. Dice the tomato flesh into small pieces.
- 19. Add the tomato cubes to the broth mixture.
- 20. Serve the asparagus with the tomato vinaigrette.
