🍝 Warm Noodle and Chicken Salad

Ingredients
- 600 g chicken breast fillet cooked (2 chicken breast fillets)
- 1 broccoli
- 2 carrots
- 250 g spiral pasta (fusilli)
- 1 onion
- 60 g parmesan (grated)
- 100 g sour cream
- 2 tbsp mustard
- 2 tbsp vinegar
- 150 ml vegetable broth
- salt
- pepper
Instructions
- 1. Peel the onion and cut it into very small cubes.
- 2. Wash the broccoli and divide it into small florets.
- 3. Peel the carrots and cut them into sticks.
- 4. Sauté the onion and broccoli in the vegetable broth for the marinade for 15 minutes.
- 5. Add the carrots after half the cooking time so they are sautéed together.
- 6. Cook the noodles in plenty of salted water until al dente.
- 7. Drain the noodles and rinse them with cold water.
- 8. Drain the vegetables through a sieve and catch the liquid.
- 9. Mix the vegetables with the noodles.
- 10. Cut the chicken meat into cubes and add them.
- 11. Stir the caught liquid with the remaining ingredients for the marinade well.
- 12. Season the marinade to taste.
- 13. Pour the marinade over the noodles.
- 14. Serve the salad lukewarm or cold, sprinkled with Parmesan.
