🥗 Warm Noodle and Cucumber Salad with Shrimp

Ingredients
- 200 g red bell peppers (1 red bell pepper)
- 160 g tomatoes (2 tomatoes)
- 400 g small salad cucumbers (or 1 piece cucumber; 1 small salad cucumber)
- salt
- 1 red onion
- 6 sprigs dill
- 3 tbsp white balsamic vinegar
- pepper
- 1 pinch sugar
- 5 tbsp olive oil
- 350 g short pasta (e.g. penne)
- 12 shrimp (kitchen-ready, without head and shell)
Instructions
- 1. Thoroughly wash the bell pepper.
- 2. Remove the stem and seeds from the bell pepper.
- 3. Cut the bell pepper into very small cubes.
- 4. Wash the tomatoes.
- 5. Cut out the hard stem areas of the tomatoes in a wedge shape.
- 6. Also finely dice the flesh of the tomatoes.
- 7. Wash the cucumber very thoroughly.
- 8. Dry the cucumber with a cloth.
- 9. Cut the cucumber in half lengthwise.
- 10. Carefully remove the seeds with a teaspoon.
- 11. Slice the cucumber halves diagonally into about one centimeter thick slices.
- 12. Peel the onion.
- 13. Cut the onion in half lengthwise.
- 14. Cut the onion into thin strips.
- 15. Wash the dill.
- 16. Shake the dill dry.
- 17. Pluck the fine dill tips from the stems.
- 18. Chop the dill tips coarsely.
- 19. Bring plenty of water with salt to a boil.
- 20. Pour the vinegar into a large bowl.
- 21. Add salt, pepper, and sugar to the vinegar.
- 22. Add three tablespoons of olive oil.
- 23. Whisk the marinade vigorously.
- 24. Add the diced bell pepper to the bowl.
- 25. Add the diced tomatoes.
- 26. Add the cucumber slices.
- 27. Add the onion strips.
- 28. Mix the vegetables well with the marinade.
- 29. Cook the pasta al dente according to package instructions.
- 30. Rinse the shrimp under cold water.
- 31. Dry the shrimp with a cloth.
- 32. Heat the remaining oil in a large non-stick pan.
- 33. Fry the shrimp over high heat.
- 34. Turn the shrimp regularly.
- 35. Fry the shrimp for three to four minutes.
- 36. Drain the pasta.
- 37. Catch 100 milliliters of pasta water in a bowl.
- 38. Add the pasta to the salad.
- 39. Add the caught pasta water.
- 40. Mix everything well.
- 41. Fold in the chopped dill.
- 42. Season the salad with salt and pepper.
- 43. Place the shrimp on the salad.
- 44. Serve the salad immediately.
