  1. 1. Combine the flour, butter, one egg, and a pinch of salt. Quickly knead the ingredients into a smooth dough. Wrap the dough in plastic wrap. Place it in the refrigerator for 30 minutes.
  2. 2. Take the dough out of the refrigerator. Roll it out thinly. Place it in your pie dish. Pull the edges of the dough up about 3 centimeters.
  3. 3. Cut the turkey ham into small cubes. Wash the leek. Cut it in half lengthwise. Remove the tough ends. Slice the leek into thin strips. Grate the Gruyère cheese. Whisk the remaining eggs. Mix them with half of the ham, the leek, the cheese, the milk, and the cream. Season the mixture with salt, pepper, and nutmeg. Fill the dish with the mixture. Scatter the remaining ham on top.
  4. 4. Preheat the oven. Bake the pie at 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-assisted) for 50 minutes. Bake until golden brown. Cover the surface with aluminum foil if it gets too dark. Remove the pie from the oven. Serve it warm.
