  3. 3. Cut the leek into pieces about 10 centimeters long.
  4. 4. Pour 125 milliliters of water into the bottom of a pressure cooker.
  5. 5. Place a steamer basket into the pot.
  6. 6. Distribute the leek evenly in the steamer basket.
  7. 7. Steam the leek for 5 minutes.
  8. 8. Remove the pot from the heat source.
  9. 9. Lift the leek out of the pot.
  10. 10. Place the leek into a serving dish.
  11. 11. Mix oil, wine, sherry, lemon juice, salt, and pepper in a small bowl.
  12. 12. Pour the marinade over the warm leek.
  13. 13. Cover the dish.
  14. 14. Let the leek absorb the flavors for 10 minutes.
  15. 15. Peel an onion just before serving.
  16. 16. Finely chop the onion.
  17. 17. Sprinkle the onion over the leek.
