  1. 1. Cut the leek into pieces approximately 15 cm long.
  2. 2. Make a lengthwise cut to the middle to obtain four leaves.
  3. 3. Blanch the leaves briefly in boiling salted water (cook briefly in boiling water).
  4. 4. Shock them immediately in ice-cold water.
  5. 5. Let the leaves drain well.
  6. 6. Mix pressed garlic with ginger, parsley, honey, lemon juice, sherry, and two tablespoons of sesame oil.
  7. 7. Season the marinade with salt and pepper.
  8. 8. Place the shrimp in the marinade.
  9. 9. Mix everything well.
  10. 10. Let the shrimp marinate for about 20 minutes.
  11. 11. Remove the shrimp from the marinade.
  12. 12. Wrap each shrimp piece with a leek leaf.
  13. 13. Secure each skewer with a wooden skewer.
  14. 14. Heat the remaining oil in the pan.
  15. 15. Slowly sauté the shrimp all around for about 5 minutes.
  16. 16. Add the remaining marinade.
  17. 17. Heat the sauce briefly.
  18. 18. Remove the skewers from the pan.
  19. 19. Serve the skewers garnished on lime slices.
