  1. 1. Combine flour, butter, one egg, and one teaspoon of salt in a bowl.
  2. 2. Knead the ingredients quickly into a smooth shortcrust pastry dough.
  3. 3. Cover the dough and place it in the refrigerator for about 30 minutes.
  4. 4. Wash the leek thoroughly and remove the tough ends.
  5. 5. Slice the leek into thin rounds.
  6. 6. Grate the cheese finely.
  7. 7. Cut the turkey ham into small cubes.
  8. 8. Preheat your oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
  9. 9. Take the dough out of the refrigerator.
  10. 10. Place the dough between two sheets of plastic wrap.
  11. 11. Roll out the dough thinly.
  12. 12. Place the dough into the quiche tin.
  13. 13. Press the dough up the sides to form a crust edge.
  14. 14. Whisk the remaining eggs in a separate bowl.
  15. 15. Add the sliced leek, grated cheese, and turkey ham cubes to the egg mixture.
  16. 16. Pour in the milk and cream.
  17. 17. Season the mixture with salt, pepper, and freshly grated nutmeg.
  18. 18. Pour the filling into the prepared pastry crust.
  19. 19. Bake the quiche for 45 to 50 minutes until golden brown.
