Ingredients
- 150 g spelt whole wheat flour
- 100 g butter
- 5 eggs
- salt
- 750 g leek (3 stalks)
- 100 g Gruyère cheese (1 piece)
- 100 ml milk (3.5% fat)
- 300 ml whipping cream
- 200 g turkey ham
- pepper
- nutmeg
Instructions
- 1. Combine flour, butter, one egg, and one teaspoon of salt in a bowl.
- 2. Knead the ingredients quickly into a smooth shortcrust pastry dough.
- 3. Cover the dough and place it in the refrigerator for about 30 minutes.
- 4. Wash the leek thoroughly and remove the tough ends.
- 5. Slice the leek into thin rounds.
- 6. Grate the cheese finely.
- 7. Cut the turkey ham into small cubes.
- 8. Preheat your oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
- 9. Take the dough out of the refrigerator.
- 10. Place the dough between two sheets of plastic wrap.
- 11. Roll out the dough thinly.
- 12. Place the dough into the quiche tin.
- 13. Press the dough up the sides to form a crust edge.
- 14. Whisk the remaining eggs in a separate bowl.
- 15. Add the sliced leek, grated cheese, and turkey ham cubes to the egg mixture.
- 16. Pour in the milk and cream.
- 17. Season the mixture with salt, pepper, and freshly grated nutmeg.
- 18. Pour the filling into the prepared pastry crust.
- 19. Bake the quiche for 45 to 50 minutes until golden brown.
