Ingredients
- 8 stalks leek
- salt
- 8 tomatoes
- 3 garlic cloves
- 8 tbsp olive oil
- 150 ml dry white wine
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 pinch sugar
- pepper (from the mill)
- 200 g feta
Instructions
- 1. Wash the leek thoroughly and remove the tough ends. Cut the vegetable into pieces about 10 centimeters long. Boil these in salted water for about 10 minutes until they are still firm. Drain the water and let the leek drain well.
- 2. Pour boiling water over the tomatoes briefly to loosen the skin. Rinse them with cold water, remove the skin, cut the tomatoes into quarters and remove the seeds. Cut the flesh into small cubes. Peel the garlic and press it through a press.
- 3. Heat the olive oil in a pot and sauté the garlic briefly in it. Add the tomato cubes and let them cook for 3 minutes. Deglaze with white wine, add the spices and let the sauce simmer for about 10 minutes. Finally, season with salt and pepper.
- 4. Arrange the leek on a serving plate and pour the tomato sauce over it. Crumble the feta cheese with your hands and sprinkle it over the dish.
