🍽️ Leek in Peanut Sauce with Rice

Ingredients
- 100 g Basmati rice
- Salt
- 500 g leek (2 stalks)
- 1 garlic clove
- 60 g roasted, salted peanuts
- 1 tsp. chili flakes
- 20 g cane sugar
Instructions
- 1. Add 250 milliliters of water and a pinch of salt to a pot.
- 2. Bring the water to a boil and add the basmati rice.
- 3. Reduce the heat to low, cover the pot, and let the rice cook for 10 to 12 minutes.
- 4. Cut the leek in half lengthwise.
- 5. Wash the leek halves thoroughly and remove the green tops.
- 6. Cut each leek half in half crosswise.
- 7. Peel the garlic.
- 8. Bring 100 milliliters of water to a boil in a pot and add a pinch of salt.
- 9. Add the leek pieces to the boiling water.
- 10. Reduce the heat to medium, cover the pot, and simmer the leek for about 10 minutes.
- 11. Add 150 milliliters of water, the peeled garlic, peanut kernels, chili flakes, and sugar to a small pot.
- 12. Bring the mixture to a boil.
- 13. Reduce the heat to low, cover the pot, and let the sauce simmer for about 3 minutes.
- 14. Puree the sauce using a hand blender or a blender.
- 15. Season the sauce to taste with salt.
- 16. Serve the rice with the leek and the peanut sauce.
