🍽️ Fresh Leek and Egg Salad

Ingredients
- 500 g thin leek stalks
- 4 hard-boiled eggs
- 0.5 tsp mustard
- 4 tbsp sunflower oil
- 3 tbsp white wine vinegar
- salt
- pepper
- 0.5 bunch chives
Instructions
- 1. Thoroughly wash the leek.
- 2. Cut off the tough ends of the leek.
- 3. Cut the white and light green parts of the leek into thick rings.
- 4. Boil the eggs until hard-boiled.
- 5. Peel the cooled eggs.
- 6. Wash the chives.
- 7. Shake the chives dry.
- 8. Cut the chives into pieces about 1 centimeter long.
- 9. Whisk mustard, vinegar, salt, and pepper together in a bowl.
- 10. Slowly stir the oil into the dressing mixture.
- 11. Mix the leek, eggs, and chives with the dressing.
- 12. Portion the salad into small bowls.
- 13. Serve the salad with baguette.
