  1. 1. Beat the egg yolks and sugar with a hand mixer for 5 to 7 minutes until very foamy.
  2. 2. Slowly sprinkle the flour into the egg mixture.
  3. 3. Mix the milk with the vanilla seeds.
  4. 4. Pour the milk-vanilla mixture into the flour mixture and stir until smooth.
  5. 5. Let the dough rest for one hour.
  6. 6. Then press the dough through a fine sieve.
  7. 7. Stir the lemon zest and cinnamon into the sieved dough.
  8. 8. Put the mixture into a pot.
  9. 9. Simmer the cream over low heat.
  10. 10. Stir constantly to prevent sticking to the bottom of the pot.
  11. 11. Stop when the vanilla cream has reached a thick consistency.
  12. 12. Spread the hot cream onto a greased baking sheet.
  13. 13. Ensure the layer is about 1.5 to 2 centimeters thick.
  14. 14. Let the cream cool for at least 2 hours until firm.
  15. 15. Cut the cooled cream into cubes.
  16. 16. Whip the egg whites to stiff peaks.
  17. 17. Dip the cubes one by one into the egg whites.
  18. 18. Roll the dipped cubes in breadcrumbs.
  19. 19. Fry the cubes in plenty of oil until golden brown.
  20. 20. Let the finished cubes drain on kitchen paper.
  21. 21. Serve the cubes on plates with the fruit sauce.
  22. 22. Garnish the dish with mint.
  23. 23. Dust the dessert with powdered sugar before serving.
