  1. 1. Peel the onion and the garlic. Chop both ingredients very finely.
  2. 2. Peel the carrot. Clean and wash the celery stalk. Cut both into fine cubes.
  3. 3. Slice the mozzarella into thin slices.
  4. 4. Heat the olive oil in a large pan.
  5. 5. Fry the minced meat until crumbly over medium heat.
  6. 6. Add the chopped onion, garlic, carrots, and celery to the pan.
  7. 7. Sauté the vegetables briefly with the meat.
  8. 8. Stir the tomato paste into the meat and vegetable mixture.
  9. 9. Pour in the meat broth and the tomatoes with their juice.
  10. 10. Mash the tomatoes slightly with a spoon.
  11. 11. Season the sauce with salt and pepper.
  12. 12. Let the sauce simmer on low heat for 30 minutes until it thickens.
  13. 13. Melt the butter in a saucepan.
  14. 14. Stir the flour into the butter and fry it briefly.
  15. 15. Pour in the milk gradually while stirring constantly.
  16. 16. Season the sauce with salt and pepper.
  17. 17. Let the béchamel sauce simmer on low heat for about 5 minutes until creamy.
  18. 18. Place some béchamel sauce on the bottom of a baking dish.
  19. 19. Place a layer of lasagna sheets on the sauce.
  20. 20. Layer the minced meat sauce, béchamel sauce, mozzarella slices, and pasta sheets alternately into the dish.
  21. 21. Finish the layers with a layer of lasagna sheets.
  22. 22. Brush the top layer with some béchamel sauce.
  23. 23. Grate the parmesan and sprinkle it over the lasagna.
  24. 24. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
  25. 25. Bake the lasagna for 45 minutes until golden brown.
  26. 26. Cover the lasagna with foil if it becomes too dark.
