🍝 Homemade Lasagna with Spicy Meat Sauce

Ingredients
- 300 g flour
- 2 eggs
- 1 tbsp olive oil
- salt
- 600 g lean lamb meat (as minced meat)
- 1 onion
- 3 garlic cloves
- 2 carrots
- 4 sprigs fresh thyme
- 1 dried chili pepper

- 150 ml dry white wine
- salt
- 600 g tomatoes
- butter
Instructions
- 1. Mix flour, eggs, oil, and one level teaspoon of salt in a bowl.
- 2. Knead the ingredients into a smooth dough.
- 3. Add a little water if the dough is too dry.
- 4. Wrap the dough in a cloth.
- 5. Let the dough rest for 30 minutes.
- 6. Peel the onion, carrots, and garlic.
- 7. Finely chop the onion, carrots, and garlic.
- 8. Pluck the thyme leaves from the stems.
- 9. Crumble the peperoncino peppers.
- 10. Heat 4 tablespoons of oil in a casserole pot.
- 11. Add the meat to the hot pot in portions.
- 12. Sear the meat in portions.
- 13. Add the chopped onion, carrots, and garlic to the meat.
- 14. Sauté the vegetables with the meat.
- 15. Add the thyme leaves and crumbled peperoncini.
- 16. Deglaze the mixture with wine.
- 17. Season the sauce with salt.
- 18. Simmer the sauce covered for about 1 hour.
- 19. Pour in a little more wine if necessary.
- 20. Wash the tomatoes just before the meat is done.
- 21. Pour boiling water over the tomatoes.
- 22. Remove the skin from the tomatoes.
- 23. Dice the peeled tomatoes.
- 24. Heat 1 tablespoon of oil in a frying pan.
- 25. Simmer the tomato cubes uncovered for 10 minutes.
- 26. Knead the dough briefly again.
- 27. Divide the dough into several portions.
- 28. Roll out the dough portions thinly.
- 29. Use a pasta machine or a rolling pin.
- 30. Bring plenty of salted water to a boil.
- 31. Cook the pasta sheets in portions until al dente.
- 32. Let the pasta drain briefly.
- 33. Add the cooked tomatoes to the meat sauce.
- 34. Stir the tomatoes in.
- 35. Season the sauce with salt and pepper.
- 36. Melt 1 tablespoon of butter.
- 37. Take 4 pre-warmed plates.
- 38. Layer 3 pasta sheets alternately with the sauce on the plates.
- 39. Drizzle each pasta sheet with the melted butter.
- 40. Serve the lasagna immediately.
