🍽️ Hearty Lamb Stew with Chestnuts

Ingredients
- 140 g dried, white beans
- 100 g dried chestnuts
- 400 g lamb meat (shoulder)
- 150 g green string beans
- 200 g pumpkin flesh
- 1 shallot
- 1 clove garlic
- 2 tbsp vegetable oil
- 1 bay leaf
- 1 tbsp dried savory
- 1 tbsp tomato paste
- 150 ml dry red wine
- 700 ml vegetable broth
- salt
- pepper (from the mill)
Instructions
- 1. Place the beans and chestnuts in two separate bowls. Fill them with cold water and let them soak overnight.
- 2. Remove the shells from the soaked chestnuts and clean them.
- 3. Rinse the lamb meat under running water. Pat it dry with a kitchen towel.
- 4. Cut the meat into small, bite-sized cubes.
- 5. Trim the green beans and wash them thoroughly. Cut them into smaller pieces if necessary.
- 6. Cut the pumpkin flesh into cubes.
- 7. Peel the shallot and the garlic. Finely chop both ingredients.
