🍽️ Aromatic Lamb Tajine

Ingredients
- 500 g lamb meat (shoulder, boneless)
- 0.5 tsp paprika powder (sweet)
- 0.5 tsp cumin
- pepper (from the mill)
- salt
- 1 onion
- 1 eggplant
- 2 tbsp ghee
- 2 tbsp olive oil
- 250 g chickpeas (from the can)
- 500 ml chicken broth
- 80 g olives
- 2 tbsp parsley
- 2 tbsp coriander leaves
Instructions
- 1. Cut the lamb meat into small, bite-sized pieces.
- 2. Mix paprika powder, cumin, plenty of pepper, and 1 teaspoon of salt in a small bowl.
- 3. Rub the meat thoroughly with the spice mixture.
- 4. Cover the meat and let it marinate in a cool place for two hours.
- 5. Peel the onion and slice it into thin rings.
- 6. Wash the eggplant and cut it into small cubes.
- 7. Heat ghee and oil in a tajine or a large deep pan.
- 8. Sear the meat all over over medium to high heat.
- 9. Add the eggplant cubes and onion rings and sauté briefly.
- 10. Reduce the heat to a low setting.
- 11. Add the chickpeas and the broth.
- 12. Cover the dish and simmer over low heat for about 45 minutes.
- 13. Stir in the herbs and olives during the last five minutes of cooking.
- 14. Season the finished dish to taste with salt and pepper.
