  1. 1. Cut the lamb meat into small, bite-sized pieces.
  2. 2. Mix paprika powder, cumin, plenty of pepper, and 1 teaspoon of salt in a small bowl.
  3. 3. Rub the meat thoroughly with the spice mixture.
  4. 4. Cover the meat and let it marinate in a cool place for two hours.
  5. 5. Peel the onion and slice it into thin rings.
  6. 6. Wash the eggplant and cut it into small cubes.
  7. 7. Heat ghee and oil in a tajine or a large deep pan.
  8. 8. Sear the meat all over over medium to high heat.
  9. 9. Add the eggplant cubes and onion rings and sauté briefly.
  10. 10. Reduce the heat to a low setting.
  11. 11. Add the chickpeas and the broth.
  12. 12. Cover the dish and simmer over low heat for about 45 minutes.
  13. 13. Stir in the herbs and olives during the last five minutes of cooking.
  14. 14. Season the finished dish to taste with salt and pepper.
