🥗 Lamb Skewers with Fresh Green Salad

Ingredients
- 2 garlic cloves
- 1 red chili pepper
- 1 sprig rosemary
- olive oil
- 600 g lamb meat (from the leg)
- 3 tomatoes
- 2 tbsp black, pitted olives
- 0.5 cucumber
- 1 red onion
- 0.5 lettuce
- 120 g feta
- 2 tbsp white wine vinegar
- salt
- pepper (from the mill)
Instructions
- 1. Peel the garlic cloves and chop them roughly.
- 2. Wash the chili, cut it lengthwise in half, remove the seeds, and chop it finely.
- 3. Rinse the rosemary, shake it dry, strip off the needles, and chop them.
- 4. Mix the garlic, chili, and rosemary needles with 6 tablespoons of olive oil.
- 5. Wash the meat, pat it dry, and cut it into 2 cm cubes.
- 6. Thread the meat cubes onto the skewers.
- 7. Brush the skewers with the marinade.
- 8. Cover the skewers and let them marinate in the refrigerator for 2 hours.
- 9. Preheat the grill.
- 10. Wash the tomatoes, remove the stem area, and cut them into thin wedges.
- 11. Drain the olives and slice them.
- 12. Wash the cucumber, cut it lengthwise into strips, and then into small cubes.
- 13. Wash the salad greens, remove the tough stems, and tear them into small pieces.
- 14. Peel the onion and slice it into thin strips.
- 15. Cut the feta cheese into small cubes.
- 16. Put all salad ingredients into a bowl and mix them.
- 17. Whisk the vinegar with 4 tablespoons of olive oil.
- 18. Season the vinaigrette with salt and pepper.
- 19. Place the skewers on the hot grill.
- 20. Grill the skewers for 6 to 8 minutes, turning them occasionally and brushing them with the remaining marinade.
- 21. Season the skewers with salt and pepper while grilling.
- 22. Toss the salad with the vinaigrette.
- 23. Plate the skewers and serve them with the salad.
