  1. 1. Rinse the meat under cold water.
  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Cut the meat into small, bite-sized cubes.
  4. 4. Peel the garlic cloves.
  5. 5. Finely chop the garlic.
  6. 6. Place the garlic in a bowl and add a pinch of salt.
  7. 7. Mash the mixture with a mortar or the flat side of a knife until it forms a paste.
  8. 8. Stir the oil and thyme leaves into the garlic paste.
  9. 9. Wash the zucchini.
  10. 10. Slice the zucchini into round pieces.
  11. 11. Wash the bell peppers.
  12. 12. Remove the inside of the bell peppers.
  13. 13. Cut the bell peppers into wide strips.
  14. 14. Thread lamb cubes, zucchini slices, and pepper strips onto the skewers in an alternating pattern.
  15. 15. Brush the skewers with some oil.
  16. 16. Season the skewers with salt and pepper.
  17. 17. Place the skewers on the hot grill.
  18. 18. Cook the skewers for about 10 minutes.
  19. 19. Turn the skewers regularly while grilling.
  20. 20. Drizzle some balsamic vinegar over the finished skewers before serving.
