🍽️ Aromatic Lamb Stew with Chickpeas and Couscous

Ingredients
- 300 g lamb meat (leg or shoulder)
- 2 tbsp olive oil
- 1 onion
- 1 clove garlic
- 200 g small potatoes
- 200 g chickpeas (can)
- 200 g chopped tomatoes (can)
- 50 g dried plums
- 1 tsp garam masala
- salt
- pepper (from the mill)
- coriander leaves (for garnish)
- 200 g couscous
- 1 tbsp almond kernels (sliced)
Instructions
- 1. Rinse the lamb meat under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the lamb meat into bite-sized cubes.
- 4. Peel the onion.
- 5. Peel the garlic clove.
- 6. Finely chop the onion and garlic.
- 7. Peel the potatoes.
- 8. Open the can of chickpeas.
- 9. Pour the chickpeas into a sieve.
- 10. Let the chickpeas drain well.
- 11. Take the dried plums from the packaging.
- 12. Roughly chop the dried plums.
- 13. Heat oil in a large pot.
- 14. Sear the lamb cubes on high heat.
- 15. Remove the meat from the pot and set it aside.
- 16. Add the chopped onion to the hot oil.
- 17. Add the chopped garlic.
- 18. Sauté the vegetables briefly.
- 19. Stir in the Garam Masala spice blend.
- 20. Deglaze the mixture with a little water.
- 21. Return the seared meat to the pot.
- 22. Add the tomatoes.
- 23. Cover the pot with a lid.
- 24. Let the stew simmer for about 45 minutes.
- 25. Add the chopped dried plums.
- 26. Add the prepared potatoes.
- 27. Add the drained chickpeas.
- 28. Let the dish cook slowly for another 30 minutes.
- 29. Add more water if necessary.
- 30. Cook the couscous according to package instructions.
- 31. Heat a non-stick pan.
- 32. Add the almonds to the dry pan.
- 33. Toast the almonds until golden brown.
- 34. Season the stew with salt.
- 35. Season the stew with pepper.
- 36. Place the couscous on a serving plate.
- 37. Place the lamb stew on top of the couscous.
- 38. Chop fresh coriander leaves.
- 39. Sprinkle the toasted almonds over the dish.
- 40. Sprinkle the fresh coriander leaves over the dish.
- 41. Serve the dish warm.
