  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Cut the lamb meat into bite-sized cubes.
  4. 4. Peel the onion.
  5. 5. Peel the garlic clove.
  6. 6. Finely chop the onion and garlic.
  7. 7. Peel the potatoes.
  8. 8. Open the can of chickpeas.
  9. 9. Pour the chickpeas into a sieve.
  10. 10. Let the chickpeas drain well.
  11. 11. Take the dried plums from the packaging.
  12. 12. Roughly chop the dried plums.
  13. 13. Heat oil in a large pot.
  14. 14. Sear the lamb cubes on high heat.
  15. 15. Remove the meat from the pot and set it aside.
  16. 16. Add the chopped onion to the hot oil.
  17. 17. Add the chopped garlic.
  18. 18. Sauté the vegetables briefly.
  19. 19. Stir in the Garam Masala spice blend.
  20. 20. Deglaze the mixture with a little water.
  21. 21. Return the seared meat to the pot.
  22. 22. Add the tomatoes.
  23. 23. Cover the pot with a lid.
  24. 24. Let the stew simmer for about 45 minutes.

  37. 37. Place the lamb stew on top of the couscous.
  38. 38. Chop fresh coriander leaves.
