🍽️ Lamb Pilaf with Rice

Ingredients
- 100 g dried apricots
- 400 g lamb meat (from the leg)
- 2 tbsp vegetable oil
- salt
- pepper (from the mill)
- 0.25 tsp cinnamon
- 0.5 tsp cumin (ground)
- 0.25 l meat broth
- 400 g long-grain rice
- 0.5 tsp turmeric
- coarsely chopped parsley (for sprinkling)
Instructions
- 1. Cut the apricots into large pieces.
- 2. Remove fat, skin, and sinew from the lamb meat.
- 3. Cut the meat into cubes.
- 4. Heat 1 tablespoon of oil in a pan.
- 5. Fry the lamb cubes in batches until browned on all sides.
- 6. Season the meat with salt, pepper, cinnamon, and cumin.
- 7. Pour in the broth.
- 8. Add the apricots.
- 9. Let everything simmer for approx. 20 minutes.
- 10. Cook the rice in salted water according to package instructions until al dente.
- 11. Heat the remaining oil in a separate pan.
- 12. Sauté the turmeric in the oil briefly.
- 13. Stir in the cooked rice.
- 14. Fry the rice for approx. 5 minutes.
- 15. Add the lamb meat with the apricots to the rice.
- 16. Gently mix everything together.
- 17. Adjust seasoning with salt and pepper.
- 18. Plate the dish.
- 19. Sprinkle with parsley.
