🍽️ Thyme Lamb Chops

Ingredients
- 3 garlic cloves
- 1 onion
- 1 bunch thyme
- 4 tbsp olive oil
- salt, pepper from the mill
- 12 rib chops (from lamb)
- juice of half a lemon
- 125 ml red wine
Instructions
- 1. Peel the garlic cloves and the onions.
- 2. Finely chop the garlic and the onions.
- 3. Rinse the fresh thyme under cold water.
- 4. Set aside a small portion of the thyme sprigs and put them aside.
- 5. Strip the leaves from the remaining thyme stems.
- 6. Mix the olive oil with the chopped garlic, onion, thyme leaves, and pepper.
- 7. Rub the lamb chops thoroughly with this marinade.
- 8. Cover the chops and let the marinade infuse for one hour.
- 9. Heat a frying pan on the stove.
- 10. Fry the lamb chops in the hot pan.
- 11. Cook the chops for two to three minutes on the first side.
- 12. Turn the chops and cook them for two to three minutes on the second side.
- 13. Salt the chops while frying.
- 14. Drizzle lemon juice over the chops shortly before the end of the cooking time.
- 15. Pour the red wine into the pan.
- 16. Add the reserved thyme to the red wine sauce.
- 17. Let the thyme infuse briefly in the sauce.
- 18. Finally, season the sauce with salt and pepper.
- 19. Plate the lamb chops.
- 20. Serve the chops with the sauce and thyme.
