🍽️ Crispy Lamb Chops with Creamy Mashed Potatoes

Ingredients
- 12 Lamb chops
- 1 tbsp Butter
- 1 tbsp Olive oil
- Salt
- Pepper (from the mill)
- 800 g Potatoes
- 2 Garlic cloves
- 1 tbsp Butter
- 150 g Crème fraîche
- 6 tbsp Olive oil
- 2 tsp Rosemary needles (chopped)
- 1 tbsp finely chopped Parsley
- Salt
- Pepper (from the mill)
- Olive oil
Instructions
- 1. Peel the garlic clove and chop it roughly.
- 2. Peel the potatoes and wash them thoroughly.
- 3. Place the potatoes and garlic in a pot with salted water.
- 4. Boil the potatoes for about 25 minutes until they are tender.
- 5. Cut the rib bones off the lamb chops.
- 6. Drain the cooked potatoes and garlic.
- 7. Add the hot butter, Creme Fraiche, and olive oil to the potatoes.
- 8. Season the mixture with salt and pepper.
- 9. Mash everything into a smooth puree using a potato masher.
- 10. Do not stir the puree too vigorously to prevent it from becoming gluey.
- 11. Gently fold the herbs into the puree.
- 12. Finally, adjust the seasoning of the puree with salt and pepper.
- 13. Keep the finished puree warm so it does not cool down.
- 14. Heat a large pan and add butter and olive oil.
- 15. Fry the lamb chops in batches in the hot fat mixture.
- 16. Sear the meat pieces quickly on both sides.
- 17. Salt and pepper the chops while frying.
- 18. Plate the lamb chops.
- 19. Place a serving of mashed potatoes next to the chops.
- 20. Serve the dish immediately while it is still hot.
- 21. Drizzle a little extra olive oil over the puree if desired.
