🍽️ Grilled Lamb Chops with Potatoes and Corn

Ingredients
- 8 double lamb chops
- 8 tbsp olive oil
- 0.5 tsp fresh chopped thyme
- 0.5 tsp fresh chopped rosemary
- 2 garlic cloves
- salt
- pepper (from the mill)
- 800 g small cooked boiled potatoes
- 1 red chili pepper (seeded and finely chopped)
- 1 shallot (chopped)
- 1 tsp dried thyme
- 3 tbsp olive oil
- 2 corn cobs
- 2 tbsp melted butter
Instructions
- 1. Peel the garlic and chop it finely.
- 2. Mix all the marinade ingredients together in a bowl.
- 3. Rinse the lamb chops under running water.
- 4. Pat the chops dry with kitchen paper.
- 5. Place the lamb chops into the marinade.
- 6. Cover the bowl and let the meat marinate in the fridge for two hours.
- 7. Turn the lamb chops once during the marinating time.
- 8. Finely chop the chili pepper.
- 9. Finely chop the shallots.
- 10. Mix the chili, shallots, thyme, and oil into a paste.
- 11. Season the oil-onion mixture with salt and pepper.
- 12. Peel the potatoes.
- 13. Place the peeled potatoes in a bowl.
- 14. Cover the potatoes with the oil-onion mixture.
- 15. Toss the potatoes thoroughly with the marinade.
- 16. Remove the corn cobs from their husks.
- 17. Clean the corn cobs and remove any remaining silk.
- 18. Bring a pot of salted water to a boil.
- 19. Add the corn cobs to the boiling water.
- 20. Boil the corn for about ten minutes (blanching).
- 21. Preheat the grill to the desired temperature.
- 22. Place the marinated potatoes on a piece of aluminum foil.
- 23. Place the foil with the potatoes onto the hot grill.
- 24. Heat the potatoes on the grill and let them roast slightly.
- 25. Cut the boiled corn cobs in half crosswise.
- 26. Melt some butter until liquid.
- 27. Brush the corn pieces with the melted butter.
- 28. Season the corn with salt and pepper.
- 29. Place the corn on the grill.
- 30. Grill the corn for a few minutes.
- 31. Let the marinated chops drain off excess marinade.
- 32. Place the lamb chops on the hot grill.
- 33. Grill the chops for three to four minutes on the first side.
- 34. Turn the chops and grill the second side for another three to four minutes.
- 35. Plate the finished chops, potatoes, and corn.
