  8. 8. Add the fresh herbs to the yogurt mixture.
  9. 9. Coat the lamb shank thoroughly with the marinade.
  10. 10. Wrap the marinated shank in cling film.
  11. 11. Place the foil-wrapped shank in the refrigerator overnight.
  12. 12. Thread the lamb shank onto a grill skewer.
  13. 13. Wrap kitchen twine around the meat to stabilize it.
  14. 14. Season the shank with salt.
  15. 15. Season the shank with freshly ground pepper.
