🍽️ Grilled Marinated Lamb Shank

Ingredients
- 1 leg of lamb (approx. 1,5 kg, kitchen-ready without bone)
- 2 garlic cloves
- 4 tbsp yogurt
- 2 tbsp chopped thyme
- 2 tbsp chopped rosemary
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the lamb shank under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Peel the garlic cloves.
- 4. Finely chop the garlic.
- 5. Mix the chopped garlic with a pinch of salt.
- 6. Mash the garlic-salt mixture into a fine paste.
- 7. Mix the garlic paste with the yogurt.
- 8. Add the fresh herbs to the yogurt mixture.
- 9. Coat the lamb shank thoroughly with the marinade.
- 10. Wrap the marinated shank in cling film.
- 11. Place the foil-wrapped shank in the refrigerator overnight.
- 12. Thread the lamb shank onto a grill skewer.
- 13. Wrap kitchen twine around the meat to stabilize it.
- 14. Season the shank with salt.
- 15. Season the shank with freshly ground pepper.
- 16. Grill the lamb shank for 50 to 60 minutes.
- 17. Remove the shank from the grill.
- 18. Place the lamb shank on a serving plate.
- 19. Serve the dish.
